Jamaican Curry Chicken

Ingredients:

2 lbs chicken, cut into pieces

2 tbsp Jamaican curry powder

1 medium onion, chopped

2 cloves garlic, minced

1-inch piece of ginger, grated

2 scallions, chopped

1 medium tomato, diced

2 medium potatoes, diced

1 cup coconut milk

1/2 cup chicken broth

1 tbsp thyme leaves


2 tbsp vegetable oil

1 scotch bonnet pepper optional for spice

Salt and pepper to taste

Instructions:

Season chicken with curry powder, salt, and pepper.

In a large pot, heat vegetable oil over medium heat and sauté onions, garlic, and ginger until fragrant.

Add chicken and cook until lightly browned on all sides.

Stir in tomatoes, scallions, thyme, and scotch bonnet pepper if using. Cook for 2-3 minutes.

Add coconut milk and chicken broth, then bring to a simmer.

Add potatoes and cook for 20-25 minutes, stirring occasionally, until chicken is cooked through and sauce thickens.

Serve hot over steamed rice or with traditional Jamaican sides.
