Pistachio Cream Donuts Recipe
Ingredients:
Donut Dough:
1 packet 7g active dry yeast
1/4 cup warm water
3/4 cup warm milk
1/3 cup sugar
1/4 cup unsalted butter, softened
1 large egg
3 cups all-purpose flour
1 tsp salt
Pistachio Cream Filling:
1 cup shelled unsalted pistachios
1/2 cup granulated sugar
1/2 cup heavy cream
1/2 cup whole milk
1 tsp vanilla extract
2 tbsp cornstarch
Pinch of salt
Pistachio Glaze:
1 cup powdered sugar
3 tbsp pistachio cream prepared filling
2 tbsp milk
Toppings:
Chopped pistachios
White chocolate drizzle optional
Preparation:
Step 1: Prepare the Donut Dough
In a bowl, dissolve yeast in warm water. Let it rest for about 5 minutes until frothy.
Mix in warm milk, sugar, butter, egg, flour, and salt. Knead until a smooth dough forms.
Cover and allow to rise in a warm place until doubled, about 1 hour.
Step 2: Shape and Fry Donuts
Roll dough on a floured surface to about 1/2-inch thickness. Use a donut cutter or round cookie cutter to cut the dough.
Cover the donuts and let them rise for an additional 30 minutes.
Fry donuts in oil at 350F 175C for about 2 minutes per side until golden brown. Drain on paper towels.
Step 3: Make Pistachio Cream Filling
Blend pistachios in a food processor until finely ground.
In a saucepan, whisk together pistachios, sugar, cream, milk, vanilla, cornstarch, and salt.
Cook over medium heat, stirring constantly until thickened and smooth. Allow to cool completely.
Step 4: Fill Donuts
Transfer pistachio cream into a piping bag fitted with a round tip.
Insert the piping tip into each donut and gently squeeze to fill.
Step 5: Prepare Pistachio Glaze
In a bowl, whisk together powdered sugar, pistachio cream, and milk until smooth.
Dip each filled donut into the glaze, allowing excess to drip off.
Step 6: Garnish
Sprinkle chopped pistachios on top.
Drizzle with melted white chocolate if desired.
