New Year Day Dinner

Ingredients:

1 lb black-eyed peas, cooked or canned

1 lb collard greens, washed and chopped

1 lb ham hock or smoked sausage

4 cups chicken broth

2 cups cooked white rice

1 small onion, chopped

1 clove garlic, minced


1 tsp smoked paprika

Salt and black pepper to taste

Cornbread optional, for serving

Instructions:

1 In a large pot, simmer the ham hock or smoked sausage in chicken broth for 1 hour to develop flavor. Remove and set aside to cool, then shred the meat.

2 Add collard greens to the pot and simmer for 25-30 minutes until tender.

3 Stir in black-eyed peas, onion, garlic, smoked paprika, salt, and pepper. Simmer for an additional 10 minutes.

4 Serve over cooked rice and garnish with shredded meat. Pair with cornbread if desired for a complete New Years feast.
