Yellow Squash and Tofu Stir Fry

Ingredients:

1 block firm tofu, drained and cubed2 yellow squashes, sliced1 tbsp olive oil1 tbsp soy sauce or tamari1 tsp sesame oil2 cloves garlic, minced1/2 inch piece of ginger, grated1/2 tsp ground turmeric1/4 tsp black pepper1 tbsp sesame seedsFresh cilantro for garnish

Instructions:


Heat olive oil in a large skillet or wok over medium heat.Add tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.In the same skillet, add sesame oil, garlic, and ginger. Sauté for 1 minute.Add the sliced yellow squash, turmeric, and black pepper. Stir-fry for 5-7 minutes until the squash is tender.Return the tofu to the skillet and add soy sauce. Stir everything together and cook for an additional 2 minutes.Sprinkle sesame seeds on top and garnish with fresh cilantro.
