Would You Eat… Triple Chocolate Cheesecake?

Ingredients:

– 1 cup milk chocolate chips

– 3 large eggs

– 1 cup granulated sugar

– 1/4 cup unsalted butter, melted

– 1 1/2 cups chocolate cookie crumbs

– 8 oz semi-sweet chocolate, melted and cooled

– 8 oz cream cheese, softened

– 1 teaspoon vanilla extract

– 1 cup white chocolate chips

Instructions:


1. Preheat your oven to 325F 163C and grease a 9-inch springform pan.

2. In a bowl, mix together chocolate cookie crumbs and melted butter. Press this mixture firmly into the bottom of your prepared pan to create a solid crust.

3. In a large mixing bowl, whip together the softened cream cheese, granulated sugar, and vanilla extract until the mixture is smooth and creamy.

4. Add the eggs one at a time, making sure to beat well after each addition to incorporate fully.

5. Divide your cheesecake batter into three equal portions. To one third, stir in the melted semi-sweet chocolate; to the second third, fold in the milk chocolate chips; and to the last third, mix in the white chocolate chips.

6. Pour the semi-sweet chocolate batter over the crust and spread it evenly. Follow with the milk chocolate batter, then top it off with the white chocolate batter for a stunning layered effect.

7. Bake in your preheated oven for 50-60 minutes, or until the center is nearly set. Once done, leave the cheesecake in the oven with the door slightly ajar for about an hour to cool gradually.

8. Cover and refrigerate the cheesecake for at least 4 hours or, for the best flavor, overnight before slicing and serving.
