Ingredients:

For the Steak:

1.5 pounds steak ribeye, sirloin, or your preferred cut

2 tablespoons olive oil

Salt and black pepper to taste

1 tablespoon garlic powder

1 tablespoon dried rosemary or thyme optional

For the Potatoes:

4 medium russet potatoes, cut into bite-sized pieces

2 tablespoons olive oil

1 teaspoon paprika

Salt and black pepper to taste

For the Garlic Butter:

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped optional

1 teaspoon lemon juice optional

Instructions:

Prepare the Potatoes:

Preheat your oven to 400F 200C.

Toss the potato pieces with olive oil, paprika, salt, and pepper.

Spread them in a single layer on a baking sheet and roast for 25-30 minutes, or until golden and crispy. Set aside.

Cook the Steak:

Season the steak with salt, black pepper, garlic powder, and dried rosemary or thyme if using.

Heat olive oil in a large skillet over medium-high heat.

Sear the steak for about 4-5 minutes per side for medium-rare, or longer depending on your desired doneness. Remove the steak from the skillet and let it rest.

Prepare the Garlic Butter:

In the same skillet, lower the heat to medium.

Add butter and let it melt.

Stir in the minced garlic and cook for about 1-2 minutes until fragrant, but be careful not to burn it.

Optionally, add fresh parsley and a splash of lemon juice for extra flavor.

Combine:

Slice the rested steak into strips.

Add the roasted potatoes to the skillet and toss to coat in the garlic butter.

Return the steak slices to the skillet and toss everything together.

Serve:

Serve the garlic butter steak and potatoes hot, garnished with additional parsley if desired.

Enjoy:

Relish in the savory, buttery goodness of this hearty skillet dish!
