Would you Eat Gooey Chocolate Raspberry Torte Cake Roll?
Ingredients:
– 1/4 cup chopped pecans
– 1/2 cup granulated sugar
– 1 cup fresh raspberries
– 1/4 teaspoon salt
– 3 large eggs
– 1/4 cup granulated sugar for filling
– 1/2 teaspoon baking powder
– 1/2 teaspoon vanilla extract for cake
– 1 cup chocolate ganache store-bought or homemade
– 1/2 cup all-purpose flour
– 1 cup heavy cream
– 2 tablespoons powdered sugar
– 1/2 teaspoon vanilla extract for topping
Instructions:
1. Preheat your oven to 350F 175C. Prepare a 15×10-inch jelly roll pan by lining it with parchment paper and giving it a light greasing.
2. In a medium bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt.
3. In a large mixing bowl, whisk the eggs and 1/2 cup of granulated sugar together until thick and pale. Stir in 1/2 teaspoon of vanilla extract.
4. Gently fold the sifted dry ingredients into the egg mixture until just combined.
5. Pour the cake batter into the prepared pan and spread it evenly. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Once done, let the cake cool slightly.
6. While the cake cools, prepare the raspberry filling by mixing together the fresh raspberries and 1/4 cup of granulated sugar in a small bowl. Mash the mixture gently using a fork.
7. Once the cake has cooled enough to handle, spread a thin layer of chocolate ganache over the top, leaving a border around the edges. Evenly distribute the raspberry mixture over the ganache.
8. Carefully roll the cake from one end to the other, using the parchment paper as a guide. Transfer the rolled cake to a serving platter.
9. For the topping, whip the heavy cream with the powdered sugar and 1/2 teaspoon of vanilla extract until stiff peaks form. Spread the whipped cream over the rolled cake generously.
10. Finish by garnishing your torte with chopped pecans and fresh raspberries. Chill in the refrigerator for at least 1 hour before slicing and serving.
