Would You Eat … Lemon Zucchini Heaven Bread 勒

Ingredients:

– 1 cup grated zucchini

– 1/2 cup buttermilk

– 1/2 teaspoon salt

– 1/2 cup vegetable oil

– 1 1/2 cups all-purpose flour

– 2 large eggs

– Zest of 2 lemons

– 3/4 cup granulated sugar

– 1 teaspoon vanilla extract

– 1/2 teaspoon baking powder

– 1/2 teaspoon baking soda

– Juice of 1 lemon

For the Glaze:

– 1 cup powdered sugar


– 2 tablespoons lemon juice

– Zest of 1 lemon

Instructions:

1. Preheat your oven to 350F 175C. Grease and flour a 9×5 inch loaf pan.

2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined. Set aside.

3. In a large bowl, beat the eggs with vegetable oil and granulated sugar until the mixture is smooth and creamy.

4. Stir in the buttermilk, vanilla extract, grated zucchini, lemon zest, and lemon juice. Mix until everything is well incorporated.

5. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Dont overmix; a few lumps are perfectly okay!

6. Pour the batter into your prepared loaf pan and pop it in the oven. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.

7. Once baked, let the bread cool in the pan for about 10 minutes. Then, carefully transfer to a wire rack to cool completely.

8. For the glaze, mix the powdered sugar, lemon juice, and lemon zest in a small bowl until smooth and creamy.

9. Drizzle the glaze over the cooled bread, allowing it to set before slicing into deliciously moist pieces.
