Whipped Chocolate Cheesecake Parfaits
Ingredients:
Crust:
– 1 cup chocolate cookie crumbs
– 2 tablespoons unsalted butter, melted
Chocolate Cheesecake Filling:
– 8 oz cream cheese, softened
– cup powdered sugar
– cup unsweetened cocoa powder
– 1 teaspoon vanilla extract
– 1 cups heavy whipping cream
Whipped Cream Topping:
– 1 cup heavy whipping cream
– 2 tablespoons powdered sugar
– 1 teaspoon vanilla extract
Toppings:
– Shaved chocolate or chocolate chips for garnish
Directions:
1. Prepare the crust: In a small bowl, mix the chocolate cookie crumbs with the melted butter until well combined. Set aside.
2. Make the chocolate cheesecake filling: In a large bowl, beat the softened cream cheese until smooth. Add the powdered sugar, cocoa powder, and vanilla extract, and beat until well incorporated.
3. Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined and fluffy.
4. Assemble the parfaits: Spoon 1-2 tablespoons of the chocolate cookie crumb mixture into the bottom of each serving glass. Add a layer of chocolate cheesecake filling on top of the crumbs. Repeat the layers if desired, ending with the cheesecake filling.
5. Prepare the whipped cream topping: In a clean bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
6. Top the parfaits: Pipe or spoon the whipped cream on top of the cheesecake layers. Garnish with shaved chocolate or chocolate chips.
7. Chill and serve: Refrigerate the parfaits for at least 1 hour to set. Serve chilled and enjoy these creamy, chocolatey treats!
