Vasilopita – Greek New Years Cake

Ingredients:

2 cups all-purpose flour

1 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

4 large eggs

1/2 cup milk

1 tbsp orange zest

1 tsp vanilla extract

1/2 cup chopped almonds optional


1 coin wrapped in foil for tradition

Powdered sugar for dusting

Instructions:

1 Preheat your oven to 350F 175C. Grease and flour an 8-inch round cake pan.

2 In a medium bowl, whisk together flour, baking powder, and salt.

3 In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each.

4 Add milk, orange zest, and vanilla, mixing until combined. Gradually fold in the dry ingredients until just combined.

5 Pour the batter into the prepared pan and gently insert the coin wrapped in foil into the batter.

6 Bake for 45-50 minutes, or until a toothpick comes out clean.

7 Let the cake cool in the pan for 10 minutes before transferring to a wire rack. Dust with powdered sugar and serve.
