Upside-Down Banana Pecan Cake
Ingredients:
For the Topping:
2 ripe bananas sliced
1/2 cup pecans halved
1/4 cup melted butter 杻
1/2 cup brown sugar
For the Cake:
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup softened butter 杻
2 large eggs 讀
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp baking soda
1/2 cup mashed ripe bananas
1/2 cup buttermilk
Instructions:
1. Prepare the Topping:
Preheat oven to 175C 350F. Grease a square baking pan.
Mix melted butter and brown sugar, then spread evenly over the bottom of the pan. Arrange banana slices and pecans on top.
2. Make the Cake Batter:
In a bowl, cream butter and sugar until fluffy. Add eggs and vanilla, mixing well.
In another bowl, combine flour, baking powder, and baking soda. Gradually add the dry ingredients to the butter mixture, alternating with buttermilk and mashed bananas.
3. Assemble and Bake:
Pour the batter over the banana and pecan topping. Smooth the surface.
Bake for 40-45 minutes or until a toothpick comes out clean.
4. Invert and Serve:
Let the cake cool for 10 minutes, then carefully invert onto a serving plate. Slice and enjoy the caramelized banana and pecan topping!
