15 soft caramels, unwrapped

2 tablespoons heavy cream

1 cup milk chocolate chips

1 teaspoon vegetable oil

Directions:

1. Prepare the Shortbread Cookies:


Preheat the oven to 350F 175C. Line a baking sheet with parchment paper.

In a large bowl, cream the butter and powdered sugar until light and fluffy.

Mix in the vanilla extract. Gradually add the flour and salt, blending until just combined.

Roll the dough into 1-inch balls, place them on the baking sheet, and slightly flatten each ball with your hand or the bottom of a glass.

Bake for 12-14 minutes, or until the edges begin to turn golden. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

2. Make the Caramel Layer:

In a small saucepan, melt the caramels with the heavy cream over low heat, stirring until smooth.

Spoon about 1 teaspoon of caramel onto each cooled cookie, spreading it evenly. Let it set for 10 minutes.

3. Make the Chocolate Layer:

In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.

Drizzle or spoon the melted chocolate over the caramel layer on each cookie.

4. Serve and Enjoy:

Let the chocolate set before serving. These cookies capture the essence of the classic Twix bar, with buttery shortbread, gooey caramel, and a rich chocolate topping!
