Turkey, Cranberry & Goat Cheese Stuffed Sweet Potatoes

Ingredients:

4 medium sweet potatoes

1 1/2 cups cooked turkey, shredded or chopped

1/3 cup dried cranberries

2 ounces goat cheese, crumbled

1/4 cup chopped pecans optional, for crunch

2 tablespoons fresh parsley, chopped for garnish

1 tablespoon olive oil

Salt and pepper to taste


Directions:

Bake the Sweet Potatoes: Preheat your oven to 400F 200C. Scrub the sweet potatoes and pierce them a few times with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until tender.

Prepare the Filling: While the sweet potatoes are baking, gather your cooked turkey and crumble the goat cheese. In a small bowl, mix the turkey with dried cranberries. Season with salt and pepper to taste.

Prepare the Sweet Potatoes: Once the sweet potatoes are fully cooked, remove them from the oven and allow them to cool slightly. Cut a slit down the center of each potato and gently push the sides open to create a pocket.

Stuff the Sweet Potatoes: Stuff each sweet potato with the turkey and cranberry mixture. Sprinkle with crumbled goat cheese and chopped pecans if using.
