Dive into paradise with this vibrant Tropical Strawberry Pineapple Shortcake! Tantalizing fruits and fluffy cream make every bite a blissful escape.
Ingredients:
– 3 tbsp granulated sugar for the shortcake
– 2 cups 300g fresh strawberries, hulled and sliced
– cup 180ml whole milk
– 6 tbsp 85g cold unsalted butter, cubed
– 2 cups 300g fresh pineapple, finely chopped
– 1 tbsp fresh lime juice
– 1 cups 360ml heavy whipping cream
– 1 tsp vanilla extract for the whipped cream
– tsp salt
– 1 tbsp baking powder
– 2 cups 250g all-purpose flour
– 3 tbsp powdered sugar
– 1 tsp vanilla extract for the shortcake
– cup 50g granulated sugar for fruit filling, adjust to taste
Instructions:
1. Begin by preparing the fruit filling. In a bowl, combine the sliced strawberries, chopped pineapple, granulated sugar, and lime juice. Gently toss everything together and let it sit for about 30 minutes, stirring occasionally to allow the flavors to blend.
2. For the shortcake, preheat your oven to 425F 220C. Line a baking sheet with parchment paper to prevent sticking.
3. In a large mixing bowl, combine the flour, baking powder, salt, and sugar for the shortcake. Whisk together until evenly mixed.
4. Add the cubed cold butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
5. Stir in the milk and 1 teaspoon of vanilla extract, mixing just until the dough comes together. Be careful not to overmix.
6. Turn the dough out onto a lightly floured surface and gently knead it about 3-4 times. Pat the dough into a round shape about -inch thick. Use a biscuit cutter to cut out 6-8 biscuits.
7. Place the biscuits on the prepared baking sheet and bake for 12-15 minutes or until they are golden brown. Once done, remove them from the oven and let them cool slightly.
8. While the shortcakes are cooling, prepare the whipped cream. In a chilled bowl, whip the heavy cream with the powdered sugar and 1 teaspoon of vanilla extract until soft peaks form.
9. Now, its time to assemble the shortcakes. Slice each biscuit in half horizontally. Spoon the macerated fruit mixture onto the bottom half, followed by a generous dollop of freshly whipped cream. Place the top half of the biscuit over the filling.
10. For an extra treat, add more whipped cream and fruit on top before serving. Enjoy your tropical escape!
