Tropical Mango Bliss Cake: A Slice of Sunshine! 省
This mango cake is a tropical delight, featuring moist layers of cake, a sweet and tangy mango filling, and fluffy whipped cream. Perfect for celebrations or when youre craving a burst of sunshine in every bite!
Ingredients:
For the Cake:
200g all-purpose flour
1 tsp baking powder
1/4 tsp salt
100g unsalted butter, softened
150g granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup 120ml milk
For the Mango Filling:
2 ripe mangoes, peeled, pitted, and diced 300g
1/4 cup 50g sugar
1 tbsp lemon juice
For the Whipped Cream:
1 cup 240ml heavy cream, chilled
2 tbsp powdered sugar
1 tsp vanilla extract
For Decoration:
Fresh mango slices
Mint leaves
Directions:
1. Make the Cake:
Preheat your oven to 350F 175C. Grease and flour two 8-inch round cake pans.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well, then stir in vanilla extract.
Gradually fold in the dry ingredients, alternating with milk, until just combined.
Divide the batter evenly between the prepared pans.
Bake for 2530 minutes, or until a toothpick inserted in the center comes out clean.
Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
2. Prepare the Mango Filling:
In a bowl, mix diced mango, sugar, and lemon juice. Let sit to release juices.
3. Make the Whipped Cream:
In a chilled bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
4. Assemble the Cake:
Place one cake layer on a serving plate. Spread a layer of whipped cream, then top with mango filling.
Add the second cake layer and repeat with whipped cream and mango filling.
Frost the top and sides with whipped cream. Decorate with fresh mango slices and mint leaves.
