Trisha Yearwoods Butterscotch Bars

Ingredients:
1/2 cup 1 stick butter, at room temperature, plus extra for greasing the pan
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
3/4 cup creamy peanut butter, divided
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup quick-cooking oatmeal
1 cup butterscotch chips
1 cup powdered sugar
4 tablespoons milk
Instructions:
Preheat the Oven:
Preheat your oven to 350F 175C. Grease a 9×13-inch baking dish with butter.
Make the Batter:
In a large mixing bowl, use an electric mixer to cream together the butter, granulated sugar, brown sugar, and 1/2 cup of the peanut butter until smooth and fluffy.
Add Wet Ingredients:
Beat in the egg and vanilla extract until well combined.
Combine Dry Ingredients:
In a separate bowl, sift together the flour, baking soda, and salt. Stir in the quick-cooking oatmeal.
Mix Together:
Gradually add the dry ingredients to the butter mixture, stirring until well combined.
Prepare the Pan:
Spread the batter evenly in the greased baking dish and sprinkle the butterscotch chips evenly over the top.
Bake:
Bake for 20-25 minutes, or until the edges are golden brown and the center is set.
Make the Glaze:
While the bars are baking, whisk together the powdered sugar, milk, and the remaining 1/4 cup of peanut butter until smooth.
Top the Bars:
Once the bars are out of the oven, pour the glaze evenly over the top while theyre still warm.
Cool and Serve:
Allow the bars to cool completely before slicing into squares and serving.
