Triple Chocolate Mousse Cake with Healthier Substitutes

Ingredients:
– 2 cups chocolate cookie crumbs
– 1/4 cup unsalted butter, melted
– 1 cup dark chocolate, melted
– 1 cup white chocolate, melted
– 1 cup milk chocolate, melted
– 3 cups heavy cream, divided
– 1/4 cup powdered sugar for each mousse layer
– 1/2 cup heavy cream for ganache
– 1/2 cup dark chocolate, chopped
Instructions:
1. Start by preparing the crust. In a mixing bowl, combine the chocolate cookie crumbs with the melted butter. Mix until you achieve a texture resembling wet sand. Firmly press this mixture into the bottom of a springform pan and refrigerate for about 30 minutes to allow it to set.
2. Next, lets whip up the chocolate mousse layers. For the first layer, take a separate bowl and whip 1 cup of heavy cream with 1/4 cup of powdered sugar until soft peaks form. Carefully fold in the melted dark chocolate until the mixture is well blended. Pour this dark chocolate mousse over the chilled crust and spread it evenly.
3. For the second layer, repeat the previous step using the melted milk chocolate. Spread this creamy mousse over the dark chocolate layer. Finally, prepare the white chocolate mousse with the remaining heavy cream and melted white chocolate. Spread this delightful layer on top as the final touch.
4. Cover the cake with plastic wrap and refrigerate it for 4-6 hours, or until the mousse layers are completely set.
5. While waiting for the cake to chill, prepare the ganache. Heat 1/2 cup of heavy cream in a small saucepan over medium heat until it just starts to simmer avoid boiling. Once hot, pour it over the chopped dark chocolate in a separate bowl. Let it sit for 2-3 minutes, then stir until the mixture is smooth and glossy.
6. After the cake is fully set, remove it from the refrigerator. Drizzle the ganache over the top, allowing it to flow down the edges. For a beautiful presentation, garnish the cake with fresh raspberries, chocolate swirls, and a few mint leaves. Slice, serve chilled, and enjoy!
