Ingredients:

– 2 lobster tails

– 8 oz scallops

– 4 tablespoons unsalted butter

– 2 cloves garlic, minced

– 1 tablespoon fresh lemon juice

– Salt, to taste

– Freshly ground black pepper, to taste

– 2 tablespoons chopped fresh parsley

– Lemon wedges, for serving

Instructions:

1. Begin by preparing your lobster tails. Using kitchen scissors, carefully cut through the top shell of each tail lengthwise, stopping just before the tail flippers. Gently pull the lobster meat out through the slit, keeping it attached at the base. Place the lobster meat back over the shell.

2. Pat the scallops dry with paper towels to ensure they sear properly. Season both the scallops and the lobster meat with salt and pepper.

3. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once melted and bubbling, add the scallops to the pan, ensuring they are not overcrowded. Sear them for 2-3 minutes on each side until they are golden brown and have a nice crust. Remove the scallops from the pan and set aside.

4. In the same skillet, add the remaining butter along with the minced garlic. Allow the garlic to sauté for about 30 seconds until fragrant but not browned.

5. Place the lobster tails cut side down in the skillet. Cook for about 3-4 minutes, then flip them over. Add lemon juice into the pan, and using a spoon, baste the lobster meat with the melted butter mixture for another 3-4 minutes until fully cooked and opaque.

6. To serve, place the lobster tails on plates, top with the seared scallops, and drizzle the garlic butter from the skillet over the top. Garnish with chopped parsley and serve with lemon wedges for an added zing.
