Traditional Italian Pizzelle Cookies
Ingredients:
2 cups all-purpose flour
3 large eggs
3/4 cup granulated sugar
1/2 cup unsalted butter, melted
1 tablespoon vanilla extract
1 tablespoon anise extract or 1 teaspoon anise seeds
1 teaspoon baking powder
A pinch of salt
Directions:
Prepare Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, and a pinch of salt. Set aside.
Whisk Eggs and Sugar: In a separate bowl, beat the eggs and granulated sugar until the mixture becomes light and fluffy.
Add Flavor and Butter: Stir in the melted butter, vanilla extract, and anise extract or seeds, mixing until well incorporated.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the egg mixture, stirring until you achieve a smooth, thick batter.
Preheat the Pizzelle Iron: Preheat your pizzelle iron following the manufacturers instructions.
Cook the Pizzelle: Spoon about 1 tablespoon of batter onto the center of each pizzelle mold, then close the iron. Cook each pizzelle for about 30 seconds to 1 minute, or until they are lightly golden brown.
Cool and Serve: Carefully remove the pizzelle from the iron and let them cool on a wire rack. Theyll become crisp as they cool.
Repeat: Repeat with the remaining batter until all pizzelle are made.
