Toffee Caramel No-Bake Cheesecake
Ingredients:
For the Cookie Base:
1 cups 213 grams chocolate cookie wafer crumbs
cup 56 grams butter, melted
For the Cheesecake Filling:
14 ounces 410 grams cream cheese, whole fat
cup 90 grams powdered/icing sugar
1 teaspoon vanilla extract
1 cups 360 grams cold whole/heavy/whipping cream
1 tablespoons powdered gelatin
2 tablespoons milk
1 cup toffee bits
For the Topping:
Caramel sauce, for drizzling
Additional toffee bits or broken chocolate caramel bars, for garnish
Directions:
Prepare the Cookie Base:
In a medium bowl, combine the chocolate cookie crumbs and melted butter until well mixed.
Press the mixture firmly into the bottom of a 78 inch 1720 cm springform pan or a regular cake pan lined with plastic wrap.
Place the pan in the refrigerator to chill while preparing the filling.
Prepare the Cheesecake Filling:
In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla extract until creamy and smooth. Set aside.
In a large bowl, whip the cold cream until stiff peaks form. Set aside.
In a small saucepan, add the milk and sprinkle the powdered gelatin over the top. Let it stand for one minute to bloom.
Place the saucepan over low heat and stir until the gelatin has completely dissolved, about 12 minutes. Do not let it boil.
Remove from heat and immediately add a heaping tablespoon of the cream cheese mixture to the gelatin mixture, stirring gently to combine.
Fold the gelatin mixture into the remaining cream cheese mixture until well incorporated.
Gently fold the whipped cream into the cream cheese mixture until fully combined.
Fold in the toffee bits until evenly distributed.
Assemble the Cheesecake:
Remove the chilled cookie base from the refrigerator.
Pour the cheesecake filling over the crust, smoothing the top with a spatula.
Cover the pan with plastic wrap and refrigerate for 45 hours, or preferably overnight, until set.
Serve:
Before serving, drizzle the top of the cheesecake with caramel sauce.
Garnish with additional toffee bits or pieces of chocolate caramel bars.
