The Real Chicago Deep-Dish Pizza Dough
Ingredients:
2 1/4 tsp active dry yeast
1 1/2 cups warm water 110F/45C
1 tsp sugar
3 1/2 cups all-purpose flour
1/2 cup cornmeal
1 tsp salt
1/4 cup olive oil
1 tbsp melted butter
Instructions:
In a bowl, combine warm water, yeast, and sugar. Let it sit for 5-10 minutes, or until the mixture becomes foamy.
In a separate large bowl, mix the flour, cornmeal, and salt.
Add the yeast mixture, olive oil, and melted butter to the dry ingredients. Stir until a dough forms.
Knead the dough on a floured surface for 7-10 minutes, until smooth and elastic.
Place the dough in an oiled bowl, cover, and let it rise for about 1-1.5 hours, or until doubled in size.
Preheat oven to 475F 245C.
Punch down the dough and transfer it to a deep-dish pizza pan, stretching it to fit the bottom and sides.
Add your desired toppings, bake for 25-30 minutes, or until the crust is golden and the cheese is bubbling.
