Swiss Mushroom Melt Delight
Ingredients:
4 slices sourdough or artisan bread
1 tablespoon butter for toasting bread
1 tablespoon olive oil
1 small onion, thinly sliced
2 cups mushrooms, sliced cremini or button
1 teaspoon garlic, minced
1 teaspoon Worcestershire sauce
Salt & black pepper, to taste
1 teaspoon fresh thyme or tsp dried
4 slices Swiss cheese
Optional: mayo or Dijon mustard for spreading
Directions:
Heat olive oil in a skillet over medium heat. Add sliced onions and cook until golden and caramelized, about 1012 minutes. Stir often.
Add mushrooms, garlic, thyme, Worcestershire sauce, salt, and pepper. Cook for another 68 minutes until mushrooms are soft and browned. Set aside.
Spread butter on one side of each bread slice. On the unbuttered side, layer Swiss cheese and mushroom-onion mixture. Top with another slice of cheese and the second bread slice buttered side out.
Grill sandwiches on a skillet or panini press over medium heat until bread is golden and cheese is melted, about 34 minutes per side.
Slice and serve hot. Add a side of soup or salad for a full meal!
