Sweet Hawaiian Crockpot Chicken
Ingredients:
2 lbs boneless, skinless chicken breasts or thighs
1 can 20 oz pineapple chunks, drained reserve juice
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup barbecue sauce
1/2 cup soy sauce
1/4 cup brown sugar
1 tbsp grated ginger
2 cloves garlic, minced
1/4 cup cornstarch
1/4 cup cold water
Cooked rice for serving
Green onions and sesame seeds for garnish
Directions:
Place the chicken in the crockpot.
Add pineapple chunks, red and yellow bell peppers.
Whisk together reserved pineapple juice, BBQ sauce, soy sauce, brown sugar, ginger, and garlic. Pour over chicken.
Cook on low for 6-8 hours or high for 3-4 hours.
Shred chicken, return to crockpot.
Mix cornstarch and water, add to crockpot to thicken the sauce.
Cook an additional 15-20 minutes.
Serve over rice, garnish with green onions and sesame seeds.
