Surf and Turf with Mashed Potatoes
Ingredients:
2 beef steaks filet mignon or ribeye
8 large shrimp, peeled and deveined
4 large potatoes, peeled and diced
3 tablespoons butter
1/4 cup milk or cream
2 garlic cloves, minced
1 tablespoon olive oil
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh parsley, chopped
For the Sauce:
1/2 cup beef or chicken stock
2 tablespoons butter
1 tablespoon flour
Instructions:
1. Prepare the Mashed Potatoes:
Boil the potatoes in salted water until soft. Drain and mash with butter, milk, salt, and pepper until smooth. Set aside.
2. Season and Cook the Steaks:
Rub steaks with olive oil, salt, pepper, and minced garlic. Heat a grill or skillet over high heat and cook steaks to your desired doneness about 3-4 minutes per side for medium-rare. Let them rest for 5 minutes.
3. Cook the Shrimp:
Toss the shrimp with olive oil, paprika, salt, and pepper. Sear in a hot skillet for 2-3 minutes per side until pink and fully cooked.
4. Make the Sauce:
In a small pan, melt butter and stir in the flour. Cook for 1 minute, then slowly add the stock while stirring to avoid lumps. Simmer until thickened.
5. Assemble the Plate:
Place a scoop of mashed potatoes on the plate, top with the steak, and arrange the shrimp on the side. Drizzle with the sauce and garnish with parsley.
