Sugar Cookies with Pastel Royal Icing

Ingredients:

– 1 large egg

– 1 cup 200g granulated sugar

– 2 cups 350g all-purpose flour

– tsp salt

– 1 tsp baking powder

– 3 cups 375g powdered sugar, sifted

– 56 tbsp water

– 1 cup 225g unsalted butter, softened

– 1 tsp vanilla extract

– tsp almond extract optional

– 2 tbsp meringue powder

– Food coloring in pastel shades pink, blue, and gold

– Edible pearls and glitter


Instructions:

1. Preheat your oven to 350F 175C and line baking sheets with parchment paper to prevent sticking.

2. In a medium bowl, mix together the all-purpose flour, baking powder, and salt. Set this dry mixture aside.

3. In a large bowl, cream the softened butter and granulated sugar together until the mixture becomes light and fluffy, which should take about 3-4 minutes.

4. Beat in the egg, vanilla extract, and almond extract if youre using it until well combined.

5. Gradually add the flour mixture to the wet ingredients, mixing until a smooth dough forms.

6. Divide the dough in half, then flatten each half into discs. Wrap them in plastic wrap and chill in the refrigerator for at least 30 minutes to make rolling easier.

7. After chilling, roll out the dough on a lightly floured surface to about -inch thick. Use cookie cutters to create shapes and place them on the prepared baking sheets.

8. Bake the cookies for 8-10 minutes, or until the edges are lightly golden. Once done, let the cookies cool completely on a wire rack before decorating.

9. For the royal icing, mix the sifted powdered sugar and meringue powder in a large bowl. Gradually add water, mixing until you reach a smooth and thick consistency.

10. Divide the icing into separate bowls and tint each portion with your desired pastel colors.

11. Use a piping bag or a small spoon to apply the royal icing to the cookies creatively. Add edible pearls and glitter to make them extra festive!

12. Allow the decorated cookies to dry completely before serving or storing them away.
