Stuffed Meatballs in Tomato Sauce
Ingredients:
500g ground beef or lamb
1/2 cup breadcrumbs
1 egg
2 garlic cloves, minced
1/4 cup chopped parsley
1/4 cup pine nuts, toasted
Salt and black pepper to taste
For the Sauce:
2 cups canned tomato puree
1 onion, finely chopped
2 garlic cloves, minced
1 tablespoon olive oil
1 teaspoon sugar
Salt and pepper to taste
Instructions:
1. Prepare the Meatballs:
In a bowl, mix the ground meat, breadcrumbs, egg, minced garlic, parsley, salt, and pepper. Form into medium-sized meatballs.
2. Stuff the Meatballs Optional:
Make a small indentation in each meatball and stuff with a few toasted pine nuts. Close and reshape.
3. Cook the Meatballs:
Heat olive oil in a skillet over medium heat and brown the meatballs on all sides. Remove and set aside.
4. Make the Sauce:
In the same skillet, sauté the onion and garlic until soft. Add the tomato puree, sugar, salt, and pepper. Simmer for 10 minutes.
5. Combine:
Add the meatballs to the sauce and let them cook on low heat for 15-20 minutes until fully cooked.
6. Garnish:
Sprinkle toasted pine nuts and fresh parsley on top before serving.
