Stuffed Chicken Thighs with Roasted Potatoes and Carrots 凜凌

Ingredients:

4 bone-in, skin-on chicken thighs2 cups spinach, chopped1/2 cup cream cheese, softened1/4 cup grated Parmesan cheese1 tbsp garlic, minced4 medium potatoes, cut into wedges3 carrots, peeled and sliced2 tbsp olive oil1 tsp dried thyme1/2 tsp paprikaSalt and pepper to taste

Instructions:


Preheat oven to 400F 200C.In a small bowl, mix spinach, cream cheese, Parmesan, and garlic to make the stuffing. Season with salt and pepper.Carefully make a pocket in each chicken thigh and stuff with the spinach mixture.Arrange the stuffed chicken thighs, potatoes, and carrots on a large baking sheet. Drizzle with olive oil and sprinkle with thyme, paprika, salt, and pepper.Roast for 35-40 minutes, until the chicken is cooked through and golden, and the potatoes and carrots are tender.Serve warm and enjoy this flavorful, hearty meal!
