Strawberry Jello Parfait
A delightful double-layered treat with a strawberry Jello base and a creamy Jello mousse on top. Perfect for parties or special occasions!
Ingredients
For the Jell-O Layer:
2 packages 3 oz each strawberry Jell-O
Boiling water & cold water as per package instructions
1 pint about 2 cups fresh strawberries, hulled and sliced
For the Jell-O Mousse Layer:
2 cups cold Sprite divided 磻
1 package 3 oz strawberry Jell-O
4 oz full-fat cream cheese, softened 燎
1 container 8 oz Cool Whip, thawed
Optional Toppings:
Extra Cool Whip or fresh whipped cream
Fresh mint leaves
Fresh strawberries for garnish
Instructions
1 Prepare the Cups:
Set up 9 clear plastic cups at an angle in a muffin tin. Use small balls of foil or paper to prop them up refer to the video for visual guidance.
2 Jell-O Layer:
Prepare the two packets of strawberry Jell-O as per package instructions for regular set not quick set.
Evenly pour the Jell-O into the angled cups, being careful not to spill.
Add a few slices of hulled and sliced strawberries into each cup.
Place the muffin tin in the fridge to let the Jell-O set completely.
3 Jell-O Mousse Layer:
Once the Jell-O is nearly set, begin making the mousse layer.
In a microwave-safe bowl, heat 1 cups of Sprite until it boils.
Whisk in the packet of strawberry Jell-O until completely dissolved.
Transfer the mixture to a blender, add softened cream cheese, and blend until smooth.
Add the remaining 1 cup of cold Sprite and blend again.
Blend in the thawed Cool Whip until smooth. Reserve cup of Cool Whip for garnish if desired.
4 Assemble the Parfait:
Pour the mousse mixture evenly over the set Jell-O layer, but use slightly less mousse than Jell-O to avoid overpowering the flavor.
Place the parfait cups back in the fridge to set completely.
5 Optional Garnish:
Once the mousse is set, top with a dollop of whipped cream or Cool Whip.
Garnish with a fresh strawberry and a sprig of mint for extra flair.
