Strawberry Cheesecake Stuffed Donuts
Ingredients:
For the Donuts:
1 cup warm milk
2 teaspoons active dry yeast
2 tablespoons sugar
2 1/2 cups all-purpose flour
1/2 teaspoon salt
2 tablespoons unsalted butter, melted
1 large egg
For the Filling:
1 cup cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup strawberry jam
For the Glaze:
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Directions:
1 Prepare the Dough:
In a bowl, dissolve the yeast and 1 tablespoon of sugar in warm milk. Let it sit for about 5 minutes until frothy.
Add the flour, salt, melted butter, egg, and remaining sugar to the yeast mixture. Knead until the dough is smooth. Cover and let it rise in a warm place until doubled in size.
2 Form and Fry the Donuts:
Roll out the dough on a floured surface to about 1/2 inch thickness. Cut out donut shapes using a round cutter and let them rise again.
Heat oil to 375F 190C and fry the donuts until golden brown, flipping halfway through. Drain on paper towels.
3 Make the Filling:
In a bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the strawberry jam.
4 Fill the Donuts:
Once the donuts have cooled, use a piping bag to fill each donut with the strawberry cheesecake mixture by making a small hole in the side.
5 Glaze the Donuts:
Whisk together the powdered sugar, milk, and vanilla to create a smooth glaze. Drizzle the glaze over the filled donuts.
