Ingredients:
For the Cheesecake:
16 oz cream cheese, softened
1/2 cup granulated sugar
1/4 cup sour cream
2 large eggs
1 tsp vanilla extract
1/2 cup strawberry puree or strawberry jam
1 cup crushed graham crackers for the base
1/4 cup unsalted butter, melted
For Dipping:
2 cups white chocolate chips or white candy melts
1 tbsp vegetable oil or coconut oil
For Garnish Optional:
Crushed freeze-dried strawberries
Sprinkles
Directions:
1. Prepare the Cheesecake:
Preheat the oven:
Preheat your oven to 325F 163C. Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
Make the crust:
In a bowl, combine crushed graham crackers and melted butter until the mixture resembles wet sand.
Press the mixture firmly and evenly into the bottom of the prepared pan to create the crust.
Bake for 8-10 minutes, then set it aside to cool while you prepare the filling.
Make the cheesecake filling:
In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
Add the eggs, one at a time, beating well after each addition.
Mix in the sour cream, vanilla extract, and strawberry puree or jam until fully combined.
Bake the cheesecake:
Pour the cheesecake batter over the cooled graham cracker crust.
Bake for 35-40 minutes, or until the center is set but still slightly jiggly.
Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight until fully chilled.
2. Prepare for Dipping:
Cut into squares:
Once the cheesecake is chilled, lift it out of the pan using the parchment overhang.
Cut the cheesecake into small, bite-sized squares and place them on a baking sheet lined with parchment or wax paper.
Freeze the squares for 30 minutes to firm them up before dipping.
3. Dip in White Chocolate:
Melt the white chocolate:
In a microwave-safe bowl, melt the white chocolate chips or candy melts with vegetable oil in 30-second intervals, stirring after each interval until the chocolate is smooth and fully melted.
Dip the cheesecake squares:
Using a fork or skewer, dip each frozen cheesecake square into the melted white chocolate, allowing any excess to drip off.
Place the dipped squares back onto the lined baking sheet.
4. Garnish:
Optional Toppings:
While the white chocolate is still soft, sprinkle with crushed freeze-dried strawberries or decorative sprinkles.
5. Chill:
Refrigerate the dipped cheesecake bites for 10-15 minutes to allow the white chocolate to fully set.
6. Serve and Enjoy:
These Strawberry Cheesecake Square Bites are the perfect balance of sweet, creamy, and crunchyan irresistible treat for any occasion!
Enjoy every decadent bite!
