Strawberry Cake with Strawberry Cream Icing Recipe

Ingredients:
– 2 cups 400g granulated sugar
– 1 cup 225g unsalted butter, softened
– 4 large eggs
– 1/2 cup 120ml milk
– 2 1/2 cups 315g all-purpose flour

– 2 1/2 teaspoons baking powder
– 1/2 cup 120ml pureed strawberries fresh or frozen, thawed
– 8 oz 225g cream cheese, softened
– 1/4 cup 60g unsalted butter, softened
– 2 1/2 cups 300g powdered sugar
– 1/4 cup 60ml strawberry puree
– Pinch of salt
Instructions:
Step 1: Make the Cake
– Preheat your oven to 350F 175C and prepare two 9-inch round cake pans by greasing and flouring them or lining them with parchment paper.
– In a medium bowl, whisk together the flour, baking powder, and salt. Set this dry mixture aside.
– In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar together until the mixture is light and fluffy, which should take about 2-3 minutes.
– Add the eggs one at a time, ensuring to beat well after each addition, followed by the vanilla extract.
– Gradually incorporate the dry ingredients into the butter mixture, alternating with the milk and pureed strawberries. Start and end with the dry ingredients, mixing until just combined.
– Divide the batter evenly between the prepared cake pans and smooth out the tops. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
– After baking, allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
