Spicy Roasted Chickpeas
Ingredients:
1 15 oz/425 g can of chickpeas, drained and rinsed
1 tbsp olive oil
1 tsp smoked paprika
tsp cayenne pepper adjust for spice level
1 tsp ground cumin
tsp garlic powder
tsp salt
tsp black pepper
Directions:
Preheat the oven:
Set your oven to 400F 200C. Line a baking sheet with parchment paper or foil for easy cleanup.
Prepare the chickpeas:
After rinsing the chickpeas, pat them completely dry with a clean kitchen towel or paper towels. Removing excess moisture is key for achieving maximum crispiness!
Optional: If you have time, remove the skins by gently rolling the chickpeas in a towel. This step helps them crisp up better, but its not essential.
Season the chickpeas:
In a mixing bowl, toss the chickpeas with olive oil, smoked paprika, cayenne pepper, cumin, garlic powder, salt, and black pepper. Mix until evenly coated.
Roast:
Spread the chickpeas in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-30 minutes, shaking the pan every 10 minutes for even cooking.
The chickpeas are done when they are golden brown and crispy. Taste-test one to ensure theyve reached your desired crunch!
Cool and enjoy:
Let the chickpeas cool completelytheyll crisp up further as they cool. Store in an airtight container at room temperature for up to 3 days.
