Southern Tea Cake Cookies
Ingredients:
2 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/4 cup buttermilk or whole milk with 1/2 tsp vinegar
Optional Garnish:
Powdered sugar for dusting
Lemon zest or cinnamon for added flavor
Directions:
Preheat the Oven:
Preheat your oven to 350F 175C. Line two baking sheets with parchment paper or lightly grease them.
Mix the Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Cream the Butter and Sugar:
In a large bowl, use a hand or stand mixer to beat the butter and sugar together until light and fluffy, about 2-3 minutes.
Add Wet Ingredients:
Beat in the eggs one at a time, followed by the vanilla extract. Slowly mix in the buttermilk until combined.
Combine and Chill:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing. Cover the dough and refrigerate for 30 minutes to make it easier to handle.
Shape the Cookies:
Scoop tablespoon-sized portions of dough and roll them into balls. Flatten each ball slightly with the palm of your hand. Place them about 2 inches apart on the prepared baking sheets.
Bake:
Bake for 10-12 minutes, or until the edges are lightly golden. The cookies should remain pale in the center for a soft, cake-like texture.
Cool and Garnish:
Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack. Dust with powdered sugar, or sprinkle with a hint of lemon zest or cinnamon for an extra touch of flavor.
