Soft Peach Cinnamon Rolls

Ingredients:

For the Dough:

1 cup warm milk about 110F

2 teaspoons active dry yeast

cup granulated sugar

4 cups all-purpose flour

1 teaspoon salt

2 large eggs, at room temperature

cup unsalted butter, softened

For the Peach Filling:

1 cups diced fresh or canned peaches, drained

cup brown sugar

1 tablespoon ground cinnamon

cup unsalted butter, softened

For the Cream Cheese Icing:

4 ounces cream cheese, softened

2 tablespoons unsalted butter, softened


1 cup powdered sugar

1 teaspoon vanilla extract

12 tablespoons milk as needed for desired consistency

Directions:

Prepare the Dough: In a large mixing bowl, combine the warm milk, yeast, and 1 tablespoon of sugar. Let it sit for about 5 minutes until foamy. Add the remaining sugar, flour, salt, eggs, and butter. Mix until a soft dough forms.

Knead and Rise: Knead the dough on a floured surface for 8-10 minutes, until smooth and elastic. Place it in a greased bowl, cover, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.

Prepare the Filling: In a small bowl, mix the brown sugar and cinnamon. Set aside the softened butter for spreading.

Roll Out and Fill Dough: Roll the dough into a large rectangle, about inch thick. Spread the softened butter over the dough, sprinkle with the cinnamon-sugar mixture, and evenly distribute the diced peaches over the top.

Roll and Slice Rolls: Starting from one long end, tightly roll the dough into a log. Cut into 12 equal pieces and place them in a greased 9×13-inch baking dish.

Second Rise: Cover the rolls with a cloth and let them rise again for 30-45 minutes, or until puffy.

Bake the Rolls: Preheat your oven to 350F 175C. Bake the rolls for 25-30 minutes, or until golden brown. Remove from the oven and allow them to cool slightly.

Make the Icing: In a medium bowl, beat together the cream cheese, butter, powdered sugar, and vanilla until smooth. Add milk, a little at a time, until the icing reaches your desired consistency.

Ice the Rolls and Serve: Spread the cream cheese icing over the warm rolls. Serve immediately and enjoy the gooey peach-cinnamon goodness!
