Smores Cheesecake
A delightful combination of creamy cheesecake, a buttery graham cracker crust, rich ganache, and toasted marshmallows. This Smores Cheesecake brings all the flavors of campfire smores into a delicious, indulgent dessert.
Ingredients:
For the Crust:
1 1/2 cups 213g finely crushed graham cracker crumbs about 14 sheets
1/3 cup 66g granulated sugar
杻 6 tablespoons 85g unsalted butter, melted
For the Marshmallow Cheesecake:
燎 32 ounces 908g cream cheese, softened
1 cup 198g granulated sugar
2/3 cup 151g sour cream, at room temperature
2 teaspoons vanilla extract
蓼 1/4 teaspoon salt
讀 4 large eggs, at room temperature
1 cup 43g mini marshmallows
1/2 cup 90g mini chocolate chips
For the Ganache:
1 cup 170g chocolate chips or chopped milk chocolate
拏 3/4 cup 170g heavy cream
For Topping:
Jumbo marshmallows for toasting
Instructions:
1 Prepare the Crust:
Preheat the oven to 325F 163C.
In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter. Stir until the crumbs are fully coated and the mixture is moist.
Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then set aside to cool.
2 Make the Cheesecake Filling:
In a large bowl, beat the softened cream cheese until smooth and creamy.
Gradually add the sugar and mix until incorporated.
Add the sour cream, vanilla extract, and salt. Mix until smooth.
Add the eggs one at a time, mixing on low speed after each addition.
Gently fold in the mini marshmallows and mini chocolate chips.
Pour the filling over the cooled crust, spreading evenly.
Bake for 60-70 minutes, or until the center is set but still slightly jiggly.
Let the cheesecake cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
3 Prepare the Ganache:
In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer.
Remove from heat and pour over the chocolate chips in a heatproof bowl.
Let it sit for 2-3 minutes, then whisk until smooth and glossy.
Allow the ganache to cool slightly before pouring it over the chilled cheesecake.
4 Toast the Marshmallows:
Arrange jumbo marshmallows on top of the ganache layer, leaving space between them.
Use a kitchen torch to toast the marshmallows to your desired doneness. Alternatively, broil in the ovenwatch closely to avoid burning.
