Shrimp Scampi Stuffed Shells

Ingredients

12 large pasta shells

1 lb shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1/2 cup dry white wine optional

1/2 cup chicken broth

1 tablespoon lemon juice

1/2 teaspoon red pepper flakes optional

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

1/2 cup breadcrumbs optional, for topping

Instructions

Cook the pasta shells:


Cook the pasta shells according to package directions. Drain and set aside to cool.

Prepare the shrimp:

In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove from the skillet and set aside.

Make the garlic sauce:

In the same skillet, add the garlic and cook for 1-2 minutes until fragrant.

Add the white wine if using and chicken broth. Bring to a simmer and cook for 3-4 minutes, allowing the sauce to reduce slightly. Stir in the lemon juice and red pepper flakes if using. Season with salt and pepper to taste.

Combine the shrimp mixture:

Chop the cooked shrimp into small pieces and add them to the sauce. Stir in the ricotta, mozzarella, and Parmesan cheeses, and half of the fresh parsley. Mix until well combined.

Stuff the shells:

Preheat the oven to 375F 190C.

Spoon the shrimp and cheese mixture into each cooked pasta shell and place them in a greased baking dish.

Bake the shells:

If desired, sprinkle breadcrumbs over the top of the stuffed shells for extra crunch.

Bake for 20-25 minutes, until the cheese is melted and bubbly.

Serve:

Garnish with the remaining fresh parsley and serve hot. Enjoy your cheesy, savory stuffed shells!
