Shrimp Chowder Recipe

Ingredients:

1 yellow onion, finely diced

2 tablespoons unsalted butter

1 cup boiling water

3 medium russet potatoes, cubed

cup chopped celery

2 cans 106g each cocktail shrimp, drained and rinsed

2 cups milk

cup shredded Swiss cheese

cup shredded cheddar cheese


teaspoon salt

teaspoon black pepper

1 teaspoon garlic powder

teaspoon celery salt

2 tablespoons finely chopped fresh parsley

Instructions:

In a large pot, melt the butter over medium heat. Add the diced onion and sauté until soft but not browned.

Stir in the celery, cubed potatoes, salt, pepper, garlic powder, celery salt, and boiling water. Cook over medium heat for about 15 minutes, or until the potatoes are tender.

Lower the heat to medium-low, then pour in the milk and add the shrimp. Heat the mixture for 5 to 7 minutes, stirring occasionally.

Finally, add the fresh parsley and both cheeses, stirring until the cheese is melted and fully combined. Serve the chowder hot.
