Savory Cajun Chicken over Creamy Parmesan Linguine

Ingredients:

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

8 oz linguine pasta

2 tablespoons butter

4 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

1/4 teaspoon crushed red pepper flakes optional for heat

1 tablespoon chopped fresh parsley for garnish


Lemon wedges, for serving optional

Directions:

Season chicken breasts on both sides with Cajun seasoning, pressing it in well.

Heat olive oil in a skillet over medium-high heat. Sear the chicken for 56 minutes on each side, or until cooked through and nicely browned. Remove from pan and let rest before slicing.

Cook linguine according to package instructions. Drain and set aside.

In the same skillet, reduce heat to medium and add butter. Sauté garlic until fragrant, about 1 minute.

Stir in heavy cream, Parmesan cheese, salt, pepper, and red pepper flakes. Simmer for 35 minutes until the sauce thickens slightly.

Add cooked linguine to the sauce and toss until coated.

Slice the rested Cajun chicken and place on top of the creamy linguine.

Garnish with parsley and serve with lemon wedges if desired.
