Sausage and Peppers Pasta
Italian Sausage and Colorful Bell Peppers Pasta
Ingredients:
8 ounces penne pasta
1 lb Italian sausage, casings removed
1 tablespoon olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 orange bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
3 cloves garlic, minced
1 can 14.5 oz diced tomatoes
1 can 15 oz tomato sauce
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes optional
Salt and pepper to taste
Grated Parmesan cheese, for serving
Fresh basil leaves, for garnish
Directions:
Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove the sausage from the skillet and set aside.
In the same skillet, add the sliced bell peppers and onion. Sauté for 5-6 minutes until they start to soften.
Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
Stir in the diced tomatoes, tomato sauce, dried basil, dried oregano, and red pepper flakes if using. Season with salt and pepper to taste.
Bring the sauce to a simmer and let it cook for about 5 minutes to allow the flavors to meld.
Add the cooked Italian sausage back to the skillet and toss to combine with the sauce and veggies.
Add the cooked penne pasta to the skillet and stir until everything is well-coated in the sauce.
Serve the Sausage and Peppers Pasta in individual bowls, garnished with grated Parmesan cheese and fresh basil leaves.
