Sausage and Apple Stuffed Acorn Squash
Ingredients:
2 medium acorn squashes, halved and seeded
1 tablespoon olive oil
Salt and pepper, to taste
pound pork sausage
1 small onion, diced
1 celery stalk, diced
1 apple, cored and diced Granny Smith or Honeycrisp work well
teaspoon dried sage
teaspoon dried thyme
cup breadcrumbs
cup grated Parmesan cheese
Fresh parsley, chopped for garnish
Directions:
Preheat Oven: Preheat your oven to 400F 200C. Line a baking sheet with parchment paper.
Roast the Squash: Place the halved acorn squashes cut side up on the prepared baking sheet. Drizzle each half with olive oil, then season with salt and pepper. Roast for 25-30 minutes, or until tender when pierced with a fork.
Prepare the Filling: While the squash is roasting, heat a skillet over medium heat. Add the sausage and cook until browned, breaking it up with a spoon. Add the onion, celery, and apple, and cook for 4-5 minutes until softened. Season with sage and thyme.
Add Breadcrumbs and Cheese: Remove the skillet from heat. Stir in the breadcrumbs and Parmesan cheese until well combined.
Stuff the Squash: Spoon the sausage and apple mixture into each roasted squash half, filling them generously.
Bake Again: Return the stuffed squashes to the oven and bake for an additional 10 minutes, until the tops are golden.
Serve: Garnish with chopped fresh parsley and serve warm. Enjoy this cozy fall dish!
