Ingredients:
– 2 medium artichokes
– 1 lemon, juiced
– 1 cup flour
– 1/2 cup vegetable oil or olive oil for frying
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 cup fresh parsley, chopped
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– 1/2 cup water
Instructions:
1. Start by preparing the artichokes. Trim the stems and outer leaves until you reach the tender inner leaves. Cut the tips of the leaves off to make them more manageable.
2. Fill a bowl with cold water and add the juice of one lemon to it. As you prepare each artichoke, place it immediately in the lemon water to prevent browning.
3. In a large mixing bowl, combine the flour, paprika, garlic powder, salt, black pepper, and chopped parsley. Mix well to ensure even flavor distribution.
4. Remove the artichokes from the lemon water and tap them dry with paper towels. This will help the coating adhere better.
5. To prepare for frying, heat the vegetable oil in a large skillet over medium-high heat. You want enough oil to submerge the bottom of the pan.
6. Take each artichoke and dip it into the flour mixture, ensuring an even coating. Then, dip it into the water, and once more into the flour mixture. This double-dipping technique will give you that extra crunch.
7. Once the oil is hot you can test it by dropping in a small piece of the batter; it should sizzle, carefully place the coated artichokes in the skillet. Fry them for about 5-7 minutes on each side, or until they are golden brown and crispy.
8. Remove the fried artichokes and place them on paper towels to absorb excess oil.
9. Serve hot, garnished with additional chopped parsley and lemon wedges on the side for a refreshing twist!
