Refreshing Lime Mousse Cheesecake with Lime Glaze

Ingredients:

– 1/4 cup fresh lime juice for glaze

– 1 1/2 cups graham cracker crumbs

– 1/4 cup granulated sugar for glaze

– 1/2 cup sweetened condensed milk

– 1/2 cup melted butter

– 1 tablespoon lime zest

– 3 packs 8 oz each cream cheese, softened

– 3 large eggs

– 1 cup granulated sugar

– 1/4 cup fresh lime juice

– 1/2 cup heavy cream

– 2 tablespoons gelatin

– 1/4 cup cold water

– Fresh blackberries and mint leaves for garnish

– 1 cup sour cream


Instructions:

1. Preheat your oven to 325F 160C and grease a 9-inch springform pan.

2. In a bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture firmly into the bottom of the prepared pan to form the crust.

3. In a large mixing bowl, beat the softened cream cheese with 1 cup of sugar until its smooth. Then, mix in the sour cream, lime juice, and lime zest until well combined.

4. Add the eggs, one at a time, making sure to mix well after each addition. Once combined, pour this creamy batter over the crust.

5. Bake the cheesecake for about 60-70 minutes, or until the center is set. Let it cool completely to room temperature.

6. In a small saucepan, sprinkle the gelatin over the cold water and let it sit for 5 minutes. Heat gently, stirring until the gelatin is fully dissolved.

7. In another bowl, whisk together the sweetened condensed milk, heavy cream, and fresh lime juice. Slowly stir in the dissolved gelatin mixture until fully combined.

8. Pour this luscious mousse over the cooled cheesecake and refrigerate for at least 4 hours, or overnight for best results.

9. For the glaze, combine the remaining 1/4 cup lime juice and 1/4 cup sugar in a small saucepan. Heat until the sugar dissolves and the mixture thickens slightly.

10. Once the cheesecake is fully set, gently pour the lime glaze over the top.

11. Serve with fresh blackberries and mint leaves for a lovely garnish. Enjoy!
