Reeses Peanut Butter Cup Roll Cake 樂
You wont believe how easy it is to make this delightful roll cake filled with luscious peanut butter and topped with rich chocolate! Perfect for any celebration or a sweet treat at home!
Ingredients:
– 1/4 cup melted butter
– 1 cup smooth peanut butter
– 1 teaspoon vanilla extract for both cake and filling
– 1/2 cup semi-sweet chocolate chips
– 1/2 cup powdered sugar for filling
– 1/4 cup milk
– 1/2 cup heavy cream for filling
– 1 cup all-purpose flour
– 1/4 teaspoon salt
– 1/2 cup granulated sugar
– 1 teaspoon baking powder
– 3 large eggs
– 1 tablespoon unsalted butter for ganache
– 1/2 cup heavy cream for ganache
– Optional: 4-6 mini Reeses Peanut Butter Cups, chopped
Instructions:
1. Start by preheating your oven to 350F 175C. Prepare a 10×15-inch jelly roll pan by greasing it and lining it with parchment paper.
2. In a medium-sized bowl, whisk together the all-purpose flour, baking powder, and salt until well mixed.
3. In a separate mixing bowl, whisk together the eggs, granulated sugar, and vanilla extract until the mixture is pale and fluffy. Gradually add the milk and melted butter to this mixture, continuing to whisk until smooth.
4. Gently fold the dry ingredients into the wet mixture just until combined. Be careful not to overmix!
5. Pour the batter into the prepared jelly roll pan, spreading it evenly with a spatula. Bake in the preheated oven for about 10-12 minutes or until a toothpick inserted into the center comes out clean.
6. While your cake is baking, prepare the peanut butter filling. In a bowl, combine the smooth peanut butter, powdered sugar, heavy cream, and 1 teaspoon of vanilla extract. Whisk until you have a smooth and creamy mixture.
7. Once the cake is baked, remove it from the oven. Immediately flip it out onto a clean kitchen towel that has been dusted with powdered sugar. Carefully peel off the parchment paper, then roll the cake up with the towel, starting from one of the shorter edges. Let it cool completely while rolled.
8. While the cake cools, make the chocolate ganache. In a small saucepan, heat 1/2 cup of heavy cream over medium heat until it starts to simmer. Remove it from the heat and add the chocolate chips and 1 tablespoon of unsalted butter. Stir until smooth and glossy.
9. Once the cake has cooled, carefully unroll it. Spread the peanut butter filling evenly over the surface, then gently re-roll the cake without the towel.
10. Drizzle the chocolate ganache over the top of the rolled cake. If desired, sprinkle with chopped mini Reeses Peanut Butter Cups for an extra treat.
