Ramen Omelet with Spinach, Mushrooms, and Cheese
Ingredients:
1 package of ramen noodles discard seasoning packet
2 large eggs
1/2 cup fresh spinach, chopped
1/4 cup mushrooms, sliced
1/4 cup shredded cheese cheddar or mozzarella
1/4 cup milk
Salt and pepper to taste
1 tbsp olive oil or butter for cooking
Instructions:
Cook ramen noodles according to package instructions without seasoning, drain, and set aside.
In a small bowl, whisk eggs, milk, salt, and pepper until well combined.
Heat olive oil or butter in a nonstick skillet over medium heat. Add mushrooms and cook for 3-4 minutes until softened.
Add spinach and cook for another 1-2 minutes until wilted.
Push vegetables to one side of the skillet, then add the cooked ramen noodles to the other side.
Pour the egg mixture over the vegetables and noodles, tilting the pan to spread the eggs evenly.
Sprinkle shredded cheese over the top, and cook for 3-4 minutes until the omelet is set and the cheese has melted.
Fold the omelet in half and serve hot!
