Ramen Noodle Soup
Ingredients:
4 cups chicken or vegetable broth
2 cups water
2 packets ramen noodles discard the seasoning packet
1 tbsp soy sauce
1 tbsp miso paste optional for deeper flavor
2 cloves garlic, minced
1-inch piece of ginger, sliced thin
1 tbsp sesame oil
1/2 cup sliced mushrooms
2 green onions, sliced
1 boiled egg optional, for garnish
Sriracha sauce optional, for heat
Fresh cilantro for garnish
Instructions:
1 In a large pot, combine chicken broth, water, soy sauce, miso paste, garlic, and ginger. Bring to a simmer and let cook for 5-7 minutes to develop the flavor.
2 Add the ramen noodles and cook according to package instructions, typically 2-3 minutes.
3 While the noodles cook, heat sesame oil in a small pan and sauté the mushrooms for 2-3 minutes until softened.
4 To serve, divide the cooked noodles into bowls and pour the hot broth over them. Top with sautéed mushrooms, green onions, and a boiled egg if using.
5 Drizzle with sriracha sauce for an extra kick and garnish with fresh cilantro.
