Quick Honey Garlic Shrimp
Ingredients:
1 lb 450 g large shrimp, peeled and deveined
2 tablespoons olive oil or vegetable oil, divided
Salt and black pepper, to taste
1/4 cup honey
1/4 cup soy sauce low sodium
1 tablespoon minced garlic about 3 cloves
1 teaspoon minced fresh ginger optional for added flavor
1 tablespoon water
1 teaspoon cornstarch optional, for thickening
Directions:
Prepare the Sauce:
In a small bowl, whisk together the honey, soy sauce, garlic, and ginger if using. Set aside.
Cook the Shrimp:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Season the shrimp with salt and pepper, then add them to the skillet in a single layer. Cook for 1-2 minutes on each side until they are pink and opaque. Remove from the skillet and set aside.
Make the Honey Garlic Sauce:
In the same skillet, add the remaining 1 tablespoon of oil if needed. Pour in the honey-soy sauce mixture and bring to a gentle simmer for about 1-2 minutes.
If youd like a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of water, then stir it into the sauce and cook until thickened.
Combine and Serve:
Return the cooked shrimp to the skillet, tossing to coat in the sauce. Cook for an additional 1-2 minutes until heated through.
Serve warm over rice, noodles, or with steamed vegetables.
