Polish Sausage and Potatoes
Ingredients:
1 lb Polish kielbasa, sliced into rounds
4 medium russet potatoes, diced
1 onion, thinly sliced
2 tbsp olive oil
2 cloves garlic, minced
1 tsp smoked paprika
tsp dried thyme
Salt and black pepper to taste
2 tbsp fresh parsley, chopped for garnish
Directions:
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the kielbasa slices and cook until browned, about 3-4 minutes per side. Remove from skillet and set aside.
In the same skillet, add the remaining olive oil and diced potatoes. Cook for 10 minutes, stirring occasionally, until they begin to soften and turn golden.
Add the sliced onion and garlic to the skillet. Cook for another 5 minutes, stirring frequently, until the onions are caramelized.
Sprinkle in smoked paprika, dried thyme, salt, and black pepper. Stir well to coat the potatoes and onions in the seasoning.
Return the cooked kielbasa to the skillet and stir everything together. Cook for another 3-5 minutes until heated through.
Remove from heat and garnish with fresh chopped parsley before serving.
