Pistachio Tiramisu
Ingredients:
1 cup shelled pistachios, finely ground
8 oz mascarpone cheese
1 cup heavy cream
cup powdered sugar
1 teaspoon vanilla extract
1 cup strong brewed espresso or coffee, cooled
2 tablespoons coffee liqueur optional
24 ladyfinger biscuits savoiardi
cup white chocolate, finely grated
cup chopped pistachios for garnish
Cocoa powder, for dusting
Directions:
In a mixing bowl, whisk together mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
Fold in the finely ground pistachios to the mascarpone mixture and gently mix until well incorporated.
In a separate shallow dish, combine cooled espresso with coffee liqueur if using.
Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not too soggy.
Layer half of the soaked ladyfingers at the bottom of a serving dish or individual glasses.
Spread half of the pistachio mascarpone mixture evenly over the ladyfingers.
Repeat the process with another layer of soaked ladyfingers and top with the remaining pistachio mascarpone cream.
Smooth out the top and sprinkle with finely grated white chocolate, chopped pistachios, and a light dusting of cocoa powder.
Refrigerate for at least 4 hours, preferably overnight, for flavors to meld beautifully.
