Pineapple Upside-Down Jello Shots
Ingredients:
3/4 cup boiling water
1 box 3 oz pineapple-flavored gelatin
1 teaspoon unflavored gelatin
1/2 cup vodka
1/2 cup butterscotch schnapps
12 maraschino cherries with stems, drained
Instructions:
Prepare the Shot Glasses:
Lightly spray 12 plastic shot glasses with cooking spray.
Wipe out most of the spray, leaving only a trace layer to help the jello shots release later.
Make the Gelatin Mixture:
In a medium bowl with a spout, combine the pineapple gelatin and unflavored gelatin.
Pour in the boiling water and stir until the gelatin has completely dissolved.
Add the vodka and butterscotch schnapps to the mixture, stirring well to combine.
Assemble the Shots:
Place a maraschino cherry into each prepared shot glass, ensuring the stem sticks out.
Pour the gelatin mixture over the cherries, filling each shot glass.
Chill:
Refrigerate the shots until the gelatin is firmly set, about 3 hours or more.
Serve:
To serve, let the jello shots sit at room temperature for a few minutes to loosen.
Gently tip them out onto a serving tray and enjoy responsibly!
