Pineapple Cherry Layer Cake
Ingredients:
For the cake layers:
2 cups all-purpose flour
2 tsp baking powder
tsp baking soda
1 cup unsalted butter softened
1 cups granulated sugar
4 large eggs
1 tsp vanilla extract
1 cup buttermilk
For the filling and topping:
1 cup cherry preserves
1 cups whipped cream or frosting
5-6 pineapple slices
6 maraschino cherries
cup caramel glaze optional

Instructions:
1. Prepare the cake layers:
Preheat oven to 350F 175C. Grease and line two 9-inch round cake pans.
Cream butter and sugar until fluffy. Add eggs one at a time, followed by vanilla.
In another bowl, combine flour, baking powder, and baking soda. Gradually add dry ingredients to the wet mixture, alternating with buttermilk.
Divide the batter between the pans and bake for 25-30 minutes. Cool completely.
2. Assemble the cake:
Place one cake layer on a serving plate. Spread a layer of whipped cream and a generous layer of cherry preserves.
Add the second cake layer on top. Spread whipped cream evenly over the surface.
3. Decorate:
Arrange pineapple slices and maraschino cherries on top. Drizzle with caramel glaze for extra indulgence.
4. Serve:
Chill for 30 minutes before serving for the perfect slice.
